Israeli Food: Majadra

A favorite staple of Israeli cuisine, majadra is a fragrant combination of rice and lentils topped with fried onions. Traditionally served with yogurt, you can also add a salad or vegetable to create a complete healthy meal.

Some cooks recommend preparing the rice and lentils separately for a more attractive final dish, but cooking them together will save time. Either way, majadra will taste delicious!

You will need:

Lentils

  • 3/4 cup brown or black lentils
  • 1  bay leaf
  • 2 cups water
  • 2  onions
  • olive oil

Rice

  • 1 1/2 cup rice
  • 2 tablespoons olive oil
  • 3 cups water, boiling
  • 2  cloves garlic, peeled and crushed
  • 1 1/2 teaspoon salt
  • 1 teaspoon powdered cumin
  • 1/4 teaspoon ground cinnamon
  • salt and pepper to taste
